From Ottoman Turkish صوجوق (sucuk), ultimately from Oğuz Turkic, a diminutive form of Old Turkic sugut- (suğut) ('to make arid, dehumidify') referring to the meat being dried before processing.

Persian زیجک must be a Turkic borrowing, says Nişanyan.
