Etymology

West Central German and Low German variant of schnippeln, whose -pp- is already a northern form, however. Compare Dutch snippen versus southern German schnipfeln. In some dialects, the -bb- can be due to regular weakening of intervocalic stops, but it is also used in dialects that do not show this development. Hence perhaps voiced by analogy with the -d- in schneiden (to cut).
