I was chatting with one of my college friends who lives in
Manhatten this week and I asked her how things were going
there... Just fine was her reply, though she said she was
running out of ideas of what to make to eat... I know what that
can be like when resources are somewhat limited... I SURE
remember what it was like trying to come up with dinners years
ago when Ron and I and "the kids" were trying to survive what
was now and again a rough time (Ron was out of work for a time,
later so was I, and we had kids, dogs, cats, etc.). I can only
imagine what it might be like for everyone depending on where
you live, and whether your grocery store is able to keep a
decent inventory.
I asked her if she'd like some of my recipes for things like
meatballs and spaghetti, or clam sauce and Linguine.. and she
said Yes, please :)
So I sent her my recipe for Clam Sauce and Linguine. She was
very happy with that recipe because it can be prepared two
different ways. I hope this recipe helps some of you as well.

Sicilian White Clam Sauce - 2 ways.

Sicilian White Clam Sauce - 2 ways.
Serves 4
#1:
1 cup extra-virgin olive oil
2 cans whole baby clams
4 cloves garlic, minced
2 cans water (use the cans from the clams)
2-3 Tablespoons chopped flat-Italian parsley leaves
dash red pepper flakes
1 pound linguine
freshly ground black pepper
Put about 1 cup virgin olive oil in the bottom of a 2 1/2 quart sauce pan.
The oil should be about 1 inch high or so. Add the garlic and saute just
until golden. Add a pinch of red pepper flakes. Drain the clams, reserving
the clam juice. *Add the clams to the oil and saute briefly. Add the clam
juice from the cans, then fill the cans with water and add the water to the
sauce. Grind some black pepper into the sauce. Simmer for 10 minutes. Do
not overcook.
Boil linguine for 7-9 minutes in salted water, you want it "al dente". Toss
the linguine with a small amount of sauce to prevent it from sticking and
place on a large platter. Serve the linguine with the hot clam sauce and
plenty of grated locatelli pecorino cheese.
#2:
Follow #1 above, but add 1/4-1/2 cup butter to the sauce when you add the
*clams.. You can use chopped clams with this variation.

there is a sparsity of articles for the 'zine. I'd MUCH rather
you sent in material... lacking that, I will fill these issues
with my meanderings and thoughts and hopefully we will grow into
something of consequence here :) Write an article!

If you are using routed Fidonet mail, don't send articles as

Don't worry about the format, I can take anything you send me
and mutilate it further as you can see above. Linux is nice
that way (g). Spell checking your own work will help though
(something I'm typically guilty of (g)).
