Italian Wedding Soup

Great soup for a chilly day :)
Soup:
1 large fryer
1 large onion sliced or diced
2 carrots, sliced
2 stalks celery, chopped
1 cup fresh parsley
1 small bay leaf
In large 8 quart pot boil 8 quarts of water, whole fryer and skim off all
foam. Simmer for 2 1/2 hours. Add onion, parsley, celery, bay leaf,
and carrots. Simmer 35 minutes or until flavorful and the vegetables
are tender.
Cook for ten minutes in boiling salted water:
1 lb. small macaroni, like orzos or ditalini
Boil the macaroni with a tablespoon of salt or to taste.
Drain, set aside adding some broth so it doesn't stick.
Meatball Mixture:
1/2 pound ground chuck, round or beef
1 clove garlic
1 slice Italian bread, dipped in water then wrung out.
1 cup Italian bread crumbs
3 Tablespoons chopped fresh parsley
1/2 cup grated Italian cheese
salt and pepper to taste
Mix the meatball mixture ingredients, and shape meatballs into
balls the size of marbles. Drop in hot soup and cook the last 5
minutes. Remove the bones and cut up the breast meat.
Add the cooked macaroni and meatballs to the soup.
Serve with grated Italian cheese.

If you are using routed Fidonet mail, don't send articles as routed
attaches. They will fail somewhere along the path before getting here.
Send them instead direct to filegate.net.
Give it a title, sign your name and network address if you have
one and send it along!
Don't worry about the format, I can take anything you send me
and mutilate it further as you can see above. Linux is nice
that way (g). Spell checking your own work will help though
(something I'm typically guilty of (g)).
