Cooking Echo Picnic Dates
Attention ! ! !
The 2013 Cooking Echo Picnic Dates have been set!
Fidonet Cooking Echo Picnic dates:
July 11-15 2013
(Thursday - Monday).
Location: 2682 Slaterville Road,
Slaterville Springs, NY 14881
This is our "new" place in Slaterville Springs, just 10 minutes
from Ithaca, NY.
The main cooking date for the picnic will be on Sunday, July
14th since some members of the Cooking echo can not make it
until that date. As usual, you are welcome to arrive on any
of those dates... and if you want to cook something, you can
cook it on any of those dates as well.
If you need a free place to stay, we have two cots available..
plus floors with rugs. If you'd like to camp out in our yard,
that's possible as well.
Activities at the picnic will include:
Sitting around our large kitchen table and talking
Eating
Cooking
Eating at local restaurants in Ithaca, NY
Last year we visited the famed MooseWood Restaurant, and Maxie's
Supper Club and Oyster Bar in Ithaca.
If you plan on attending, contact Janis Kracht, 1:261/38, or
post in the Fidonet COOKING echo. It's always helpful to know
in advance if you will need some particular piece of equipment
or food item so we can accomodate you!

The US TV & Radio Free app might seem a little too good to be true. It
streams unlimited live TV to your Android device, and it doesn't cost a
penny.
The app offers an extensive list of channels: AMC, Bravo, Cartoon Network,
Discovery Channel, Food Network, FX, MTV, NBC, Nickelodeon, Syfy, TBS, TNT,
and lots more. Even more surprising: a few premium channels, including HBO,
Showtime, and Starz.

Pickled Beets Aunt Ruths Recipe
Submitted by Ed Vance
6 Lb Fresh Beets - Wash beets.
Remove beet tops, leaving 1 inch stem and tap roots.
(Do not cut roots or all of stems because they will bleed)
Cook Beets first if fresh in water to cover Beets.
Seperate large from small.
Because small beets take less time to cook than large beets.
Put all same sized beets in pot.
Cover beets completely with water.
Cook until tender.
Drain.
Save the Beet juice.
(Strain the Beet juice through cheese cloth.)
Remove beet skins.
Slice beets.
Or use 1 Gallon canned Beets, 1 Gal. = Eight 15 oz. cans of beets
RINSE AND CHECK FOR BAD SPOTS ON BEETS FROM CANS.
5-1/2 C. Beet juice, or add enough water to make 5-1/2 C.
4 C. White Vinegar 5%
2 T. Salt
2 t. ground Cloves
2 t. ground Allspice
1 1/2 T. ground Cinnamon
1 t. ground Ginger
4 C. Sugar
4 medium Onions sliced thin
Combine Beet liquid, Vinegar, Salt, Spices and Sugar.
Heat to boiling, covered.
Add Beets cook for 25 minutes.
Add Onions simmer 5 minutes.
BE SURE TO BOIL LIDS AND RIMS.
Continue simmering beets while quickly packing one hot sterilized
jar at a time.
Fill to within 1/8 inch. Making sure juice covers Beets.
Seal each jar at once.
Makes 4 Quarts from 8 cans of Beets.
Variation: Using 3 cans of Beets.
3 15 oz. Cans of Beets (store bought)
RINSE AND CHECK FOR BAD SPOTS ON BEETS FROM CANS.
Save 2 C. Beet juice (from can) or add enough water to make 2
Cups liquid
(STRAIN THE BEET JUICE THROUGH A VERY FINE STRAINER.)
2/3 C. White Vinegar 5%
1 t. Salt
1/2 t. ground Cloves
1/2 t. ground Allspice
3/4 t. ground Cinnamon
1/4 t. ground Ginger
2/3 C. Sugar
1 small Onion (sliced thin)

Where to Send Your Articles
Unlike most editors, I surely do not mind running my mouth
when there is a sparsity of articles for the 'zine. I'd
MUCH rather you sent in material... lacking that, I will
fill these issues with my meanderings and thoughts and
hopefully we will grow into something of consequence here
:)
Write an article!
If you WOULD like to submit an article, feel free to drop
your article off at:

If you are using routed Fidonet mail, don't send articles as routed
attaches. They will fail somewhere along the path before getting here.
Send them instead direct to filegate.net.
Give it a title, sign your name and network address if you have
one and send it along!
Don't worry about the format, I can take anything you send me
and mutilate it further as you can see above. Linux is nice
that way (g). Spell checking your own work will help though
(something I'm typically guilty of (g)).
