    Cooking Echo Picnic Dates
    
    Attention ! ! !
    
    The 2013 Cooking Echo Picnic Dates have been set!
    
    Fidonet Cooking Echo Picnic dates: July 11-15 2013
    (Thursday - Monday).
    
    Location: 2682 Slaterville Road,
              Slaterville Springs, NY 14881
    
    This is our "new" place in Slaterville Springs, just 10 minutes
    from Ithaca, NY.
    
    
    The main cooking date for the picnic will be on Sunday, July
    14th since some members of the Cooking echo can not make it
    until that date.  As usual, you are welcome to arrive on any 
    of those dates and stay as long as you are able throughout 
    those dates... and if you want to cook something, you can
    cook it on any of those dates as well.  Sometimes people 
    bring various contraptions they'd like to show/demonstrate
    to others, that's always welcome!
    
    If you need a free place to stay, we have cots  plus floors
    with rugs (vbg).  You can camp out as well, let me know if
    you'll need parking space.
    
    Activities at the picnic will include: 
    
    Sitting around our large kitchen table and talking
    Eating
    Cooking
    Eating at local restaurants in Ithaca, NY
    Drinking good beer if you'd like to do so :)
    
    Last year we visited the famed MooseWood Restaurant, and Maxie's
    Supper Club and Oyster Bar in Ithaca.
    
    If you plan on attending, contact Janis Kracht, 1:261/38, or
    post in the Fidonet COOKING echo.  It's always helpful to know
    in advance if you will need some particular piece of equipment
    or food item so we can accomodate you!

    How blessed it feels to come to you and continue to write these
    articles for you that you may feel blessed as well and of great
    comfort.  We left off from the cities of Sodom and Gomorrah
    being burned and the seed of Lot by his own daughters after he
    was drunken from wine.  Now we will proceed.
    
    Okay, lets open our bibles to Genesis Chapter 20, verse 1.
    
    Gen 20:1  And Abraham journeyed from thence toward the south
    country, and dwelled between Kadesh and Shur, and sojourned in
    Gerar.
    
    Abraham with his wife, Sarah, have now arrive in Gerar, between
    the citieis Kadesh and Shur.
    
    Gen 20:2  And Abraham said of Sarah his wife, She is my sister:
    and Abimelech king of Gerar sent, and took Sarah.
    Gen 20:3  But God came to Abimelech in a dream by night, and
    said to him, Behold, thou art but a dead man, for the woman
    which thou hast taken; for she is a man's wife.
    
    Not covered yet, but covetry is a sin of itself and is not a
    commandment of love.  To covet is to desire of something or
    someone that doesn't belong to ones self.  I say get yours and
    leave mine alone!   Mine you, Abimelech is the king of
    Gerar, an Arabian city during this period.
    
    Gen 20:4  But Abimelech had not come near her: and he said,
    Lord, wilt thou slay also a righteous nation?
    Gen 20:5  Said he not unto me, She is my sister? and she, even
    she herself said, He is my brother: in the integrity of my heart
    and innocency of my hands have I done this.
    Gen 20:6  And God said unto him in a dream, Yea, I know that
    thou didst this in the integrity of thy heart; for I also
    withheld thee from sinning against me: therefore suffered I thee
    not to touch her.

    Gen 20:7  Now therefore restore the man his wife; for he is a
    prophet, and he shall pray for thee, and thou shalt live: and if
    thou restore her not, know thou that thou shalt surely die,
    thou, and all that are thine.
    Gen 20:8  Therefore Abimelech rose early in the morning, and
    called all his servants, and told all these things in their
    ears: and the men were sore afraid.
    Gen 20:9  Then Abimelech called Abraham, and said unto him, What
    hast thou done unto us?  and what have I offended thee, that
    thou hast brought on me and on my kingdom a great sin?  thou
    hast done deeds unto me that ought not to be done.
    Gen 20:10  And Abimelech said unto Abraham, What sawest thou,
    that thou hast done this thing?
    Gen 20:11  And Abraham said, Because I thought, Surely the fear
    of God is not in this place; and they will slay me for my wife's
    sake.
    
    Abraham is fearful of being killed because of the land that he
    is dwelling in because the fear of God was not in this place,
    this place of Gerar.  It can be intimidating to come to a place
    that is not of our Lord and could possibly be anger agressive in
    sight of a lamb such as Abraham, a man of God.
    
    Gen 20:12  And yet indeed she is my sister; she is the daughter
    of my father, but not the daughter of my mother; and she became
    my wife.
    Gen 20:13 And it came to pass, when God caused me to wander from
    my father's house, that I said unto her, This is thy kindness
    which thou shalt shew unto me; at every place whither we shall
    come, say of me, He is my brother.
    Gen 20:14  And Abimelech took sheep, and oxen, and menservants,
    and womenservants, and gave them unto Abraham, and restored him
    Sarah his wife.
    Gen 20:15  And Abimelech said, Behold, my land is before thee:
    dwell where it pleaseth thee.
    
    But Abraham did not need to be afraid, full of fear for God was
    with him and his voice was heard by the king of this land after
    he was put to sleep, as well as all those under his command.
    
    Gen 20:16  And unto Sarah he said, Behold, I have given thy
    brother a thousand pieces of silver: behold, he is to thee a
    covering of the eyes, unto all that are with thee, and with all
    other: thus she was reproved.
    Gen 20:17  So Abraham prayed unto God: and God healed Abimelech,
    and his wife, and his maidservants; and they bare children.
    Gen 20:18  For the LORD had fast closed up all the wombs of the
    house of Abimelech, because of Sarah Abraham's wife.
    
    And because Sarah was Abraham's wife, it was put at mercy of
    Abimelech and God's mercy that he was spared.  God knows us and
    hears us even when we least expect him to.  Always be aware of
    God's presence day and night because He is always here.  When
    you are afraid, meditate on God's word and pray, he will restore
    you mind and God willing, He will turn things around, things we
    least expect.  May your travels be safe!

    Turning Leftovers into Art
    or Kentucky Burgoo

    Leftovers were taking over my 'fridge the last few days.  I
    always cook way too much (so my husband says).  
    
    To me, it is just the way it's done.  Part of that is probably
    because of the habits picked up from my mom who lived through
    the depression when everything you ate was dear...  like when
    the tomato sauce pot was empty of ladles of sauce, you put the
    pot in the sink, shot some water into it from the spigot, and
    swirled it around...  just to grab those last particles of
    sauce...  If you were going to cook, you tried to make sure
    there was plenty for everyone at the table.  If there were
    left-overs, you saved them to be used in combination with other
    meal's leftovers for another meal...  that would be as opposed
    to feeding them to your dogs :)
    
    Not that Mom didn't give our exitable crazy Irish Setter
    left-overs now and again..  Red was particular to rigatoni and
    tomato sauce ..  I'd say more than particular.  He begged for it
    whenever it was served.  He'd watch my oldest sister line up the
    rigatoni on her plate like regimens of marching soldiers and he
    would start whining.  Dad would say to my sis "JUST EAT IT"
    Lol..  and at that point, the dog knew he'd be getting a
    dinner whether he'd polished off his dog food or not.  I loved
    macaroni of any kind, so there was NONE of mine given to that
    dog ...  At other dinners when there was broccoli..  well, I'd
    carefully find my napkin and spit.  I was no dummy.  I didn't
    think broccoli would be good for any living thing when I was a
    kid. 
    
    Neither are 'Human Dinners good for Dogs' I'd decided way back
    when my husband and I got our first dog..  if you give them them
    left-overs, they would steal what they think is their fair
    share..  and then some!  Like the brownies I made for Latin
    Class (Red ate all 16 of them!).  Our labs were even better at
    stealing food it seemed.
    
    Anyway, knowing my 3 dogs would never see a single left-over in
    their dish, I surveyed the contents of my fridge tonight and saw
    the makings of a great dinner..  something we'd loved when we
    lived in Lousiville, KY, Burgoo.
    
    I had 2 cups of hot chili leftover, about 1/2 of a Char Su pork
    rib roast we'd demolished the night before last, about a 1/2
    pound of round eye steak we had with the "kids" last night, and
    the remains of Chicken Cacciatore (chicken in tomato sauce with
    green peppers) we'd had a day or so ago..
    
    What I had in leftovers was about the classic ingredients for
    Kentucky Burgoo..  helped along with some good stock, etc.
    
    I pulled out large pot.
    
    I filled it about 4 cups of water and put the leftover
    chicken/tomato sauce in..  There were a legs and thighs so I
    knew I'd have to take out the bones.  I filled it up about 3/4
    full with good chicken stock and removed as much of the meat
    from the bones as I could.  I knew that chicken has been cooked
    so thoroughly already.
    
    Normally, for Kentucky Burgoo, you first fill a pot with water,
    and plunk a whole chicken in it.  You bring it to a boil, remove
    the scum and simmer it for at least an hour.
    
    I was ahead of the game.. :) I turned the heat up pretty high
    and watched the rest of the chicken start to fall from the bones.
    
    Next with normal Burgoo, you add about a pound of beef, bring it
    to a boil and simmer it for another hour.. 
    
    By then with normal burgoo the chicken is starting to fall off
    the bones, so again, I was ahead of the game since the round
    steak was tender and already broiled rare...  I chopped the
    leftover steak into small pieces to make sure it was tenderized.
    
    I pulled the leftover pork roast out of the fridge and cut all
    the meat from the bones..  this is the third thing you add to
    Burgoo..  about a pound or two of pork roast...This was a rib
    roast so there was plenty of fat..  which I knew would help with
    the flavor.  There was about the equivelent of 4 pork chops left
    in that roast..  like I said, I over cook..  sometimes I can't
    control it, it's how the piece of meat is sold (grin).
    
    I tossed in the two cups of chili that was leftover, along with
    another can of beans.  With normal burgoo you're supposed to add
    say a cup of lima beans (yuck).  I added a can of Italian
    cannellini  beans.. they taste SO good.
    
    Ok.. the tomato sauce from the Chicken Cacciatore and the chili
    took care of the tomatoes..  normally about now you'd add a can
    of peeled tomatoes or a few tablespoons of tomato paste.  I
    didn't have to..  I did give the pot a sprinkle or more of salt
    and pepper and a good shot or two of cayenne.  Now it tasted
    like Burgoo with the meat essentially shredded, and the
    seasonings giving that bite you expect.
    
    Oops time for the vegetables.. I grabbed two stalks of celery,
    two carrots, and an onion, chopped them up and threw them in.. 
    I peeled and chopped two potatoes..  hehe..  I also had a
    left-over hassle-back potato with chedder cheese (just one)
    leftover from the pork dinner, so I chopped it into quarters and
    tossed it in.

    With "real" Kentucky Burgoo, you normally want to thicken the
    mix with the classic thickening agent, like file powder.  In
    Kentucky it was always in my cabinet..  now if I don't have it I
    use kneaded flour..  I put about two or three tablespoons of
    flour in a small bowl, knead it with your fingers with about two
    or three tablespoons of flour..  once mixed, add it to the stew
    and cook until thickened.
    
    Kentucky Burgoo
    Ingredients:
    
    1 2 1/2-3 lb. stewing chicken
    1 pound round steak
    1 pound pork roast
    2 cups spicy barbecue sauce
    2 green peppers, sliced
    5 black peppercorns
    4 medium potatoes, peeled
    2 carrots, cut into two inch lengths
    2 stalks celery, cut into two inch lengths
    1-7 oz. package corn
    1 8oz can of beans (red, white or whatever)
    2 tablespoons tomato paste
    2 large onions
    salt, pepper
    A pinch of cayenne to taste, or a few drops of Tabasco sauce
    
    Put the  whole chicken into a large stock pot and cover with
    water.  Add the peppercorns.  Bring to a boil, remove the scum
    and then let simmer for 2 hours.   Bring the contents of the
    pot to a boil, and add the beef.  Reduce the heat and simmer for
    another hour. Bring the contents of the pot to a boil again and
    add pork.  Reduce the heat and simmer for another hour. By now
    the various meats should be getting tender to the fork.  When
    the chicken starts to fall off the bones, remove the bones. 
    Continue simmering until the meat is shredded.  
    
    Add the potatoes, carrots, celery and corn.  Add the barbecue
    sauce and tomato paste.  Stir in the beans.  Add salt and pepper
    to taste.
    
    Continue simmering for another hour.  You can thicken the Burgoo
    if desired.  Some people really like Burgoo spicy - you can add

    MUCH rather you sent in material...  lacking that, I will
    fill these issues with my meanderings and thoughts and
    hopefully we will grow into something of consequence here
