Gluten Free Angel Food Cake

For this recipe:
1. To make a regular gluten cake: if you are making a regular
gluten cake, you can use all the same ingredients except for
the Almond flour. Use regular cake flour in that case, or use
all-purpose flour, removing about 2 tablespoons all-purpose
flour per cup to substitute all-purpose flour for cake flour.
2. Make sure your mixing bowl and all mixer attachments are
clean of any oil. If you don't use a very clean bowl, the
egg-whites will not create the volume you need for this cake.
3. Never use a plastic bowl for Angel Food Cake because it retains
too much oil even if you clean it well. Use a Stainless bowl,
or glass mixing bowl.
Electric Mixer Angel Food Cake
Ingredients:
1 1/4 cup sifted blanched Almond flour (*see note below)
1 1/2 cups granulated white sugar
1 1/2 cups egg whites, at room temperature (from about 12 large eggs)
1 teaspoon cream of tartar
1/2 teaspoon salt
1 tablespoon fresh lemon juice
1 teaspoons pure vanilla extract
1 teaspoon pure almond exteract
In a large bowl sift together 3/4 cup white sugar and the
sifted flour. Set aside.
Beat the eggs until frothy, then add cream of tartar, lemon
juice and salt.
With wire attachment, whip the eggs until soft peaks form.
Gradually add the rest of the sugar, about one tablespoon at at time
until glossy peaks form. Scrape down the sides of the bowl.
Beat in the vanilla and almond extract.
Add the flour in four parts, folding gently up from the
bottom of the bowl.
Bake at 350F for 45 minutes or until done. The cake is done
when a toothpick is inserted in the center of the cake and it
comes out clean.
Invert the pan on bottle or other object to let it cool for at
least an hour and 1/2.
*I buy almond flour from honeyvillegrain.com. it's perfect for
non-gluten cooking!
