Etymology

From Middle Armenian թուռշի (tʻuṙši), թուրշի (tʻurši), from Classical Persian ترشی (turšī). In some dialects, via Ottoman Turkish ترشی (türşî).[1] Related to Middle Armenian թուրուշ (tʻuruš, bitter, resentful), թուրշա (tʻurša, a kind of plant).
