Inherited from Byzantine Greek ζάχαρις (zákharis) / ζάχαρι(ν) (zákhari(n)), from Ancient Greek σάκχαρις (sákkharis), derived from σάκχαρ (sákkhar) which is ultimately from Sanskrit शर्करा (śarkarā) via Pali.
